Oh Molletes, molletes, molletes… how great it is that you came to us one summer afternoon and decided to stay as an item on our rotating menu! Really, the kids love you!!

At TotSpot we love celebrating! We love celebrating birthdays. We love celebrating holidays. We love celebrating new additions to your family. We love celebrating Friday. We love celebrating potty training. We love celebrating new students. We love celebrating developmental accomplishments. AND we love celebrating culture! A fun and creative way for us to do that is through our cooking. This is a recipe from Mexico (courtesy of the lovely Karla) that will have you wanting to book your next family vacation down south!

Have you ever been surprised that something so simple to make could be so delicious?! Well when we go over the recipe for Tot Spot’s Molletes, I am sure you will have that reaction again. But really though, how could a toasty bun, covered with refried beans and cheese be anything other than a hit at dinner time? This is definitely a quick and easy recipe that you could whip up in less that 15ish minutes. You can even include your kids in the process (obviously up to your discretion, don’t blame us if they spoon refried beans at the dog or their younger sibling…)! Serving this for dinner or lunch on the weekend will hopefully be as much of a success for you as it is for us! We also find a little bit of joy in hearing a room full of toddlers or preschoolers try to pronounce Molletes… so if your kids are asking for ‘more mo-jet-gtdrfgmvklxckldf’, just go with it.

So without further to do… here is the recipe!! And, I am sharing it with you contingent on the fact that you do not ask me how to pronounce Molletes either (ask Karla)… I am not good with pronouncing new words from different languages properly, which made taking Biblical Hebrew in University a good laugh for my classmates. K ANYWAYS, here you go!!


Prep Time: 5 Minutes

Cook Time: 8-10 minutes

Oven Temp: 350 F/ 175 C

Serving Size: 4


  • Large Buns of Your Choice ( Kaiser, Ciabatta, etc.)
  • 1 (15 OZ/ 425 G ) Can of Refried Beans
  • 2 Cups Shredded Cheese (Tex Mex, Mozerella, Cheddar, etc.)

*note: you can also make your own refried beans, which will add more time and require more ingredients. I will attach a recipe to the bottom for those adventurous parents!

*note 2: Molletes are also great topped with pico de gallo, salsa, or any other topping you may think worthy! I love jalapeños on anything, especially when I don’t touch the seeds then my eyes directly afterwards…


  • Preheat oven to 350F
  • Slice buns in half. Place flat-side up on a baking sheet.
  • Spread refried beans on the flat tops. Generously sprinkle your shredded cheese.
  • Bake in the over for 8-10 minutes (or until cheese is melted, bubbly and starting to brown…yum!!)
  • Serve warm! Delicious as is, but throw some toppings on should you like to!

These are great paired with a side of veggies or salad! And just like that- boom! You’re done and dinner is on the table!
